Sancocho (from the Spanish verb sancochar, “to parboil”) is a traditional soup in Colombia. Sancocho de Pollo, a hearty soup almost like a stew, is a traditional dish in the Antioquia region of Colombia that combines potatoes, yuca, corn, plantains, and chicken.
